Oatmeal Banana Muffins

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 12
  • 1 tablespoon unsalted butter
  • 1 tablespoon light brown sugar
  • 1/2 cup walnuts
  • 2 cups all-purpose flour
  • 2/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups canola oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup banana
  • 1/2 cup walnuts
  • 2/3 cup banana

Recipe

  • 1 pre-heat the oven 375 lightly grease a 12-cup muffin pan with butter.
  • 2 for the walnut topping, in a small bowl, combine the melted butter, brown sugar, and 1/2 c chopped walnuts and set aside.
  • 3 in another bowl using an electric mixer on med speed, combine the mild, oil, eggs, vanilla, and mashed banana until there are no lumps. make a well in the flour mixture and add the banana mixture all at once. using a spatula or large spoon, stir gently until just barely combined. fold in the 1/2 c chopped walnuts and diced banana. the batter should be a little lumpy, so don't overmix.
  • 4 divide the batter equally into the 12 muffin cups and, using your fingers, sprinkle each muffin with the walnut topping. bake for 25 min or until lightly browned.
  • 5 immediately remove the muffins from the pan to a wire cooling rack.
