Nutty Lemon Muffins

Ingredients
- 1 3/4 cups flour
- 1 cup chopped walnuts
- 1/3 cup sugar
- 2 teaspoons baking powder
- 2 teaspoons grated lemon zest
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup milk
- 1 1/3 cups butter, melted
- 1/4 cup sour cream
- 3 tablespoons flour
- 3 tablespoons sugar
- 3 tablespoons chopped walnuts
- 2 tablespoons butter, softened
- 2 teaspoons grated lemon zest
Recipe
- 1 for the muffins ~ mix the flour, walnuts, sugar, baking powder, lemon zest and salt in a large bowl.
- 2 beat the egg with a fork in a small bowl; then add milk butter and sour cream to egg.
- 3 add egg mixture to flour mixture and stir until just blended.
- 4 fill greased muffin cups 2/3 full and sprinkle with streusel topping.
- 5 bake at 400º for 15 to 25 minutes or until a toothpick inserted in the center comes out clean.
- 6 streusel topping: combine the flour, sugar, walnuts, butter, lemon zest in a bowl and mix well.
