Nutty Cranberry Scones

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, very cold
  • 1/2 cup minus 2 tablespoons buttermilk
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup walnuts, chopped
  • 1 cup dried cranberries, chopped

Recipe

  • 1 mix dry ingredients well.
  • 2 cut in butter until the mixture resembles coarse pebbles.
  • 3 beat together egg, vanilla, and buttermilk, then add to dry ingredients and mix briefly (do not overmix dough).
  • 4 add walnuts and dried cranberries then mix briefly.
  • 5 turn dough out on well-floured cutting board. knead briefly, working in enough flour to make a stiff dough.
  • 6 shape into rectangle about 1 1/2 inches thick. cut into 12 squares.
  • 7 bake at 400f for 20 minutes.
