Individual Grape Upside Down Cakes

Ingredients

  • Servings: 12
  • 1/2 cup apple jelly
  • 1 cup green seedless grape, halved
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup walnuts, chopped
  • 1 cup milk
  • 4 tablespoons butter, melted
  • 1 large egg, slightly beaten
  • confectioners' sugar, for dusting

Recipe

  • 1 preheat oven to 400 degrees f.
  • 2 grease 12 cup muffin tin, then spoon 2 teaspoons apple jelly into each, and divide grape halves into each cup.
  • 3 in a large bowl, whisk together flour, sugar, baking powder and salt.
  • 4 in a separate bowl, whisk together milk, butter, and egg.
  • 5 stir milk mixture into flour mixture just until moistened.
  • 6 divide dough into muffin cups and bake until golden, about 15 to 20 minutes (wooden toothpick should come out clean).
  • 7 leave cakes in muffin tin about 2 minutes, then remove to cool on cooling rack.
  • 8 dust with confectioners' sugar just before serving.
