Nutty Apricot Dip

Ingredients

  • 250 g philadelphia cream cheese, softened
  • 1/4 cup honey
  • 1 cup natural yoghurt
  • 1 teaspoon vanilla essence
  • 30 g crushed mixed nuts
  • 30 g walnuts, chopped
  • 30 g almonds, ground
  • 30 g dried apricots, chopped
  • 1 pineapple, halved & flesh diced

Recipe

  • 1 beat cream cheese until smooth.
  • 2 add remaining ingredients, except pineapple, mix well.
  • 3 spoon into pineapple half and decorate with extra nuts & apricots.
  • 4 serve with extra fruits.

Nutty Pasta With Wilted Winter Greens

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 3 cups kale, rinsed, dried, and torn into manageable pieces
  • 2 cups mushrooms, sliced and dirt wiped away
  • 1 (12 ounce) package pasta, shapes of your choice (i usually love anything made from whole grains)
  • 2 garlic cloves, minced finely
  • 1/2 cup onion, finely diced
  • 1/4 cup walnut pieces, toasted
  • 3 tablespoons extra virgin olive oil
  • 1/2 cup parmesan cheese, fresh grated
  • cooking spray
  • salt
  • pepper
  • red pepper flakes

Recipe

  • 1 cook the pasta according to package instructions to al'dente or slightly firmer.
  • 2 heat a large skillet with non-stick cooking spray and olive oil over medium-high heat. sweat onions for a few minutes. add mushrooms and cook for 2-3 minutes. add greens and garlic.
  • 3 ensure that you are seasoning every step of the way to build your layers of flavor.
  • 4 cover and let cook until greens are completely wilted over medium low heat.
  • 5 add cooked, drained pasta to the skillet with greens. add a small ladle full cooking water from pasta, and allow to cook at low heat for a few minutes until flavors have combined.
  • 6 serve with toasted walnuts and fresh grated parmiggiano (or romano) cheese.

Linzer Valentine Hearts

Ingredients

  • 3/4 lb butter, softened
  • 1 3/4 cups confectioners' sugar, divided
  • 1 egg
  • 2 cups flour, sifted
  • 1 cup cornstarch
  • 2 cups shelled walnuts, finely grated
  • 1/2 cup raspberry preserves

Recipe

  • 1 in large mixing bowl, cream together butter and 1 cup sugar until fluffy.
  • 2 add egg and beat well.
  • 3 sift together flour and cornstarch and add to butter mixture.
  • 4 stir in walnuts.
  • 5 mix well.
  • 6 place dough in a ball in wax paper and chill for roughly 5 hours.
  • 7 roll dough on lightly floured surface to 1/4" thickness.
  • 8 using cookie cutters, cut out equal numbers of solid hearts and hearts with centre cut out.
  • 9 (you can either re-roll the cut out centres to make more of the larger hearts or bake them all for little bite-size cookies.) place on ungreased cookie sheet.
  • 10 chill for 30 minutes.
  • 11 bake at 325 for 10- 15 minutes or until lightly browned.
  • 12 place on rack to cool.
  • 13 while still slightly warm, spread the bottom side of the full hearts with jam- about 1/4 tsp each.
  • 14 top with heart that has centre cut out.
  • 15 bottoms should be together, tops facing out for a smoother look.
  • 16 (for mini hearts, spread jam on bottom of one heart and top with a second of same size- bottoms together) sift 1/2 cup of the remaining sugar and press bottoms of cookies in sugar to coat.
  • 17 gently sift the remaining 1/4 cup sugar over tops of cookies.

Delicious Milk Chocolate Toffee With Almonds

Total Time: 23 mins Preparation Time: 5 mins Cook Time: 18 mins

Ingredients

  • 1 cup slivered almonds
  • 1 cup butter (no subs!)
  • 1 cup sugar
  • 1/3 cup water
  • 3/4 teaspoon vanilla (use only pure vanilla extract not artificial for this)
  • 1/4 teaspoon salt
  • 2 cups milk chocolate chips
  • 1 cup finely ground walnuts

Recipe

  • 1 line a large baking sheet with foil, then lightly coat the foil with cooking spray.
  • 2 place the almonds in a single layer on top of the foil.
  • 3 in a heavy saucepan over high heat cook the butter with sugar, water, vanilla and salt for about 15-18 minutes stirring constantly until a candy thermometer reads 310 degrees; remove from heat and immediately pour the hot mixture over the almonds (do not scrape the pan!).
  • 4 sprinkle immediately with the chocolate chips, then spread chocolate evenly to 1/2-inch from the sides.
  • 5 sprinkle with ground walnuts; let stand until firm.
  • 6 break into small pieces, then store in an airtight container.

Prunes In Orange Sauce

Ingredients

  • Servings: 6
  • 1 cup orange juice, preferably fresh squeezed
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest, grated (minced fine too)
  • 1/4 cup honey
  • 1/2 teaspoon cinnamon (1 cinnamon stick fine too)
  • 1/4 cup walnuts, chopped
  • 24 prunes (unpitted if you can find them)

Recipe

  • 1 combine orange and lemon juice, lemon zest, honey, and cinnamon in a medium sized saucepan. bring to a simmer on high heat and add prunes.
  • 2 turn the heat as low as possible and cover. simmer gently for only about 10 minutes. keep an eye on them so prunes don't get soggy. add chopped walnuts and cook for another couple of minutes.
  • 3 remove prunes with a slotted spoon and turn the heat to medium-high; reduce the liquid to about half. pour the syrup over the prunes and chill or serve warm. if using cinnamon stick - leave it in the syrup with the prunes.

  • 1/2 cup packed light brown sugar

  • 1 heat oven to 400°f place crackers in single layer in foil-lined 15x10x3/4-inch pan.

  • 1 in a large mixing bowl stir together flour, powdered sugar, and corn starch.

  • 4 ounces mushrooms

Recipe

  • 1 half fill a large pan with hot, salted water, add 1 tsp cooking oil and bring to the boil. stir in the pasta and cook for 6-8 minutes, until al dente, not soggy. drain well and keep warm.

  • 1 tablespoon soft butter
  • 2 egg whites
  • 1/2 cup firmly packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 cup sliced almonds
  • 1 cup chopped pecans
  • 1 cup chopped walnuts

Recipe

  • 1 preheat an oven to 350°f line 2 baking sheets with aluminum foil and lightly grease with the soft butter.
  • 2 in a bowl, combine the egg whites, brown sugar, vanilla and salt. stir with a fork, mashing any lumps of sugar, until the mixture is frothy and smooth. add the almonds, pecans and walnuts. mix with the fork until all the nuts are well coated, scraping down the sides of the bowl with a spatula.
  • 3 drop heaping tablespoonfuls of the nut mixture onto the prepared baking sheets, spacing them about 2 inches apart. as you work, scrape down the sides of the bowl and stir the mixture occasionally. flatten the mounds slightly.
  • 4 place 1 baking sheet in the oven and bake until the nuts are well browned, 14 to 16 minutes. using oven mitts, remove the baking sheet from the oven and set it on a wire rack to cool completely. bake the second sheet of jumbles.
  • 5 using your fingers, carefully peel the cooled jumbles from the foil. store in an airtight container at room temperature for up to 1 week.

Mascarpone Stuffed Apricots

Nutty As A Fruitcake (healthy Version)

Ingredients

  • 1 cup dried pineapple, chopped
  • 1 cup dried apricot, chopped
  • 2 cups walnuts, chopped or 2 cups pecans
  • 2 cups dates, chopped
  • 3 cups sweetened flaked coconut
  • 1/4 lb maraschino cherries or 1/4 lb dried cherries
  • 1/2 cup flour
  • 1 (14 ounce) can sweetened condensed milk

Recipe

  • 1 preheat oven to 350 degrees fahrenheit.
  • 2 mix all ingredients, except condensed milk, in a large bowl.
  • 3 pour the can of condensed milk over the fruit mixture. mix well.
  • 4 pour into well greased loaf pans(2 large or 3 small). bake for 30 minutes at 350 degrees fahrenheit.
  • 5 cool in pans a few minutes before turning out onto wire racks to finish cooling.
  • 6 the longer this keeps the better it tastes! enjoy!

Fresh Strawberry Bread

Ingredients

  • 1 cup pureed fresh strawberries
  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup sugar
  • 1/3 cup shortening
  • 2 eggs
  • 1/3 cup water
  • 1/2 cup chopped walnuts (i leave them out) (optional)

Recipe

  • 1 pour pureed strawberries into a small saucepan. heat to boiling over medium heat and cook 1 minute, stirring constantly; cool.
  • 2 in a large mixing bowl, cream sugar, shortening and eggs until light and fluffy.
  • 3 combine remaining dry ingredients.
  • 4 alternately add flour mixture and water to creamed mixture, mixing at low speed.
  • 5 stir in pureed strawberries.
  • 6 blend well, so that there are no patches of batter, but be careful not to overmix, or bread will be tough.
  • 7 fold in nuts, if using.
  • 8 put batter in a 9x5 loaf pan that has been sprayed with cooking spray, or into two 1-lb pans.
  • 9 bake at 350° for about 1 hour (45-50 minutes for the smaller pans), or until a toothpick inserted in the center comes out clean.
  • 10 cool in pan 10 minutes; remove from pan and cool completely on wire rack.
  • 11 mellow bread by wrapping in foil and freezing or storing at room temperature for 24 hours. important: don't skip this step. this bread is pretty tasteless right out of the oven. a definite case of what a difference a day makes.

Fresh Summertime Vegetable Salad

Ingredients

  • 1 lb french haricots vert, trimmed and halved
  • 1/2 cucumber, thinly sliced
  • 1/2 cup radish, sliced
  • 1/2 cup red onion, thinly sliced then halved
  • 2 large fresh tomatoes, chopped
  • 1 cup feta cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 3 tablespoons lemon juice, preferably freshly squeezed
  • 3 tablespoons extra virgin olive oil
  • 1 -2 tablespoon fresh tarragon, chopped or 1 teaspoon dried tarragon
  • 1 teaspoon sugar (or to taste)
  • 1 teaspoon dijon mustard
  • 1 -2 garlic clove, minced
  • salt & freshly ground black pepper, to taste

  • 1 steam the haricots verts beans until tender crisp (about 3 min).
  • 2 drain, run under cold water to stop cooking and drain again.
  • 3 in a large bowl, combine the vegetables and feta cheese.
  • 4 prepare dressing by whisking together all ingredients.
  • 5 pour dressing over salad and mix well.
  • 6 sprinkle with chopped walnuts and serve.

  • 1 3/4 cups flour
  • 1 cup chopped walnuts
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 2 teaspoons grated lemon zest

  • 1/2 cup milk
  • 1 1/3 cups butter, melted
  • 1/4 cup sour cream
  • 3 tablespoons flour
  • 3 tablespoons sugar
  • 3 tablespoons chopped walnuts
  • 2 tablespoons butter, softened
  • 2 teaspoons grated lemon zest

Recipe

  • 1 for the muffins ~ mix the flour, walnuts, sugar, baking powder, lemon zest and salt in a large bowl.
  • 2 beat the egg with a fork in a small bowl; then add milk butter and sour cream to egg.
  • 3 add egg mixture to flour mixture and stir until just blended.
  • 4 fill greased muffin cups 2/3 full and sprinkle with streusel topping.
  • 5 bake at 400º for 15 to 25 minutes or until a toothpick inserted in the center comes out clean.
  • 6 streusel topping: combine the flour, sugar, walnuts, butter, lemon zest in a bowl and mix well.

Lamb And Beans Bread

Ingredients

  • 1/3 cup raisins
  • 1/3 cup boiling water
  • 1 egg
  • 1/3 cup oil
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 (8 ounce) can libby deep-browned lamb and beans
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup chopped walnuts (optional)

  • 1 mix raisins with boiling water, stir and set aside.

  • 1 cover apricots with water, and bring to a boil; reduce heat, and simmer, uncovered, 15 minutes or until tender.

  • 3 coarsely chop apricots, and set aside. combine reserved apricot liquid and 3/4 cup sugar in a saucepan; simmer 5 minutes.

  • 1 unroll crust. spread the jam almost to the edges. sprinkle walnuts over jam. rollup like a jellyroll.
  • 2 cut into 1/2 inch thick pieces using a serated knife. if you have truble cutting, use a little flour on the knife.
  • 3 onto a lightly oiled cookie sheet, place slices leaving about 1/2 inch between each.
  • 4 dunk a glass into the sugar and press slices til almost flat. don't worry about cracks forming.

Pickled Figs In Balsamic

  • 3 cups water from the boiled figs

  • 10 peppercorns, crushed and rough chopped
  • 3 allspice berries, crushed and rough chopped
  • 4 juniper berries, crushed and chopped
  • 1 teaspoon kosher salt
  • 1 tablespoon fresh rosemary, broken into half
  • meat, and zest strips of 1 lemon discard pith
  • 2 cups hulled halved walnuts

  • 1 place figs in a large pot and cover with boiling water for 3 minutes. cool. drain all but 3 cups of the water. combine the 3 cups water, vinegar, sugar, honey, vanilla, peppercorns, allspice berries, juniper, salt, rosemary, lemon meat and zest strips in a large nonreactive pot. bring to a boil and simmer for 10 minutes.
  • 2 carefully lower the figs into the simmering syrup. simmer uncovered for twenty minutes, add the walnuts. continue simmering for another 10-25 minutes depending on the size of your figs. the liquid should look slightly syrupy and the figs should be a little glossy .
  • 3 arrange figs in jars, dividing the goodness in the syrup evenly between them. with a ladle pour the syrup over the figs leaving 1/2 inch of headroom.
  • 4 close and seal the jars . process in a boiling water bath for 15 minutes.

  • 1 place the prunes, half the lemon juice and zest, the cinnamon stick, and bay leaves in a medium saucepan and bring to a boil, then almost immediately turn down the heat to simmer for 3 - 4 minutes. cool and let this stand overnight.
  • 2 preheat the oven to 325°f.
  • 3 butter the base and sides of a 10-inch square or round baking pan.
  • 4 cut the brioche into cubes and place in a food processor with the walnuts, then process until finely chopped.

Recipe

  • 1 mix the oats, flour, sugar, coconut, sunflower seeds and walnuts in a large bowl.
  • 2 mix the golden syrup into the melted butter and add this to the center of the dry ingredients.
  • 3 add the bicarbonate of soda to the boiling water and pour into the center of the butter mixture.
  • 4 mix thoroughly.
  • 5 roll about a tablespoon of the mixture into a ball in your hands. now flatten it between your hands and place it on a greased baking tray.
  • 6 repeat until all ingredients are used up.
  • 7 bake at 150°c for 20 minutes.
  • 8 to make them a bit crunchier, leave them in the oven for a further 30 minutes at 20°c.

Red, , And Blue (berry) Green Salad

  • 1 move your oven rack so that the top of the loaf will be in the center of the oven. heat the oven to 350ºf. grease three loaf pans with with shortening. line with parchement if desired.
  • 2 cream sugar and butter in a large bowl unitl light and fluffy.
  • 3 stir in eggs until blended.
  • 4 add bananas, milk, and vanilla. beat until smooth.
  • 5 mix remaining dry ingredients in ziplock bag and gently combine with banana mix. stir in nuts and/or chocolate.

  • 3 bake for 15 minutes, then remove and stir. bake another 15 minutes. while it bakes, assemble the other ingredients. (coat the 1/4 cup measure with oil before using it for maple syrup).
  • 4 immediately transfer oat mixture to a large bowl and stir in the dried fruit and cinnamon. slowly, pour in the maple syrup and stir to mix well.
  • 5 let it cool and store in an airtight container where, my guess is, it'll keep up to a month. like it'll last that long :-).

Crumble-top Peach Pie

Ingredients

  • 1 prepared pie crust (i recommend)
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1/4 teaspoon cinnamon
  • 1/4 cup butter
  • 1/2 cup walnuts (optional) or 1/2 cup pecans (optional)
  • 1 (398 ml) can sliced peaches or 2 cups fresh peaches, sliced

Recipe

  • 1 preheat oven to 450 degrees.
  • 2 mix flour, sugars and cinnamon together.
  • 3 cut cold butter into mixture using two knives or one of those handy gadgets (the name evades me)until pieces are small pea-sized.
  • 4 put half of the mixture into the bottom of the pie shell.
  • 5 put peaches in pie.
  • 6 mix nuts with remaining mixture (if you're using any) and use the mixture to top the pie.
  • 7 bake pie for 10 minutes at 450 degrees. reduce heat to 350 degrees and bake for 20 minutes.

  • 12 ounces frozen berries (blueberries or raspberries, but any work)
  • 1/4 cup sugar
  • 2 teaspoons cornstarch
  • 2 1/2 cups prepared topping (recipe follows)
  • 5 ounces all-purpose flour (appx 1 cup)
  • 2/3 cup sugar
  • 1 1/2 cups chopped nuts such as walnuts or 1 1/2 cups pecans or 1 1/2 cups almonds
  • 1 1/2 cups gingersnaps, crushed
  • 4 ounces unsalted butter, cubed and chilled

  • 1 preheat oven to 350 degrees f.
  • 2 place the frozen berries, sugar, cornstarch and 1/2 cup of the crisp topping into a medium mixing bowl and stir to combine. divide the mixture evenly between 4 ramekins (7-8oz size). top each ramekin with 1/2 cup of the remaining crisp topping. place ramekins on a sheet pan and bake in the middle rack of the oven for 30-35 minutes or until the fruit is bubbling and the topping is browned. allow to cool for 1 minutes before serving.

  • 3/4 cup butter, very soft

  • 1 dissolve yeast in warm milk in large bowl of electric mixer. let stand 5 minutes.

  • 4 turn dough out onto floured board. divide into 4 equal portions.

  • 10 roll each dough ball to 1/4 inch thickness and spread with 1/4th of the filling. roll up lenghtwise into jelly roll shape and curve roll. place on baking sheet with the seam side down. be sure all edges are sealed. brush rolls with melted butter
  • 11 bake at 350 degrees for 30 to 40 minutes until golden brown. take out of oven and brush again with melted butter.

Nutty Ice Cream Pie

  • 1 (8 ounce) bag frozen coconut
  • 1 (8 ounce) package cream cheese
  • 1 cup pecans or 1 cup walnuts
  • 2 frozen deep dish pie shell
  • 1 (8 ounce) can condensed milk
  • 1/2 cup butter
  • 2 (16 ounce) containers cool whip
  • 1 (8 ounce) jar caramel sauce

Recipe

  • 1 first mix your cream cheese and condensed milk in a large mixing bowl until smooth. then fold in both tubs of coolwhip into your cream cheese mixture carefully. set aside in fridge. then bring your butter to a simmer over medium heat in a large skillet, add your coconut and pecans(walnuts).bring back to a simmer and reduce heat to medium low. after about 5 minutes, stirring occasionally, pour nut mixture into a bowl and set in fridge or freezer to cool to room temperature. bake your empty pie crusts as directed on packaging. after the pie crusts cool your other mixtures should be ready as well. layer your cream cheese mixture, nut mixture, and caramel sauce in your pie shells and freeze overnight or several hours until firm. cut into slices, and enjoy!

  • 1 cup slivered almonds

  • 1/2 cup unsalted sunflower seeds (approximate-i just throw in a hand full or two)
  • 1/2-1 cup ecological no sugar corn flakes (optional)
  • 1/4 cup vegetable oil
  • 1/4 cup honey (i prefer acacia honey)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract

  • 1 preheat oven to 275f/135°c.
  • 2 in a large bowl toss oatmeal, coconut, nuts, and sunflower seeds together.
  • 3 in a separate bowl whisk together oil, honey, cinnamon, and vanilla.
  • 4 pour liquid mixture over oats and stir until everything is coated.
  • 5 pour mixture into a large rimmed baking sheet. i also cover the baking sheet with baking paper but it's not necessary if you have a non-stick pan.
