Karydopita Creme Caramel - Walnut Cake Creme Caramel

Total Time: 6 hrs 50 mins Preparation Time: 20 mins Cook Time: 6 hrs 30 mins

Ingredients

  • Servings: 8
  • 3 tablespoons water
  • 1 tablespoon lemon juice
  • 1 cup sugar
  • 8 eggs
  • 1 cup sugar
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 4 cups warm milk
  • 6 eggs, whites separated from yolks
  • 1 cup sugar
  • 1 cup walnuts, coarsely chopped
  • 3/4 cup fine breadcrumbs
  • 1 teaspoon cinnamon
  • 1/2 teaspoon clove, ground
  • 2 teaspoons baking powder

Recipe

  • 1 make the caramel: place water, lemon juice, and sugar in a saucepan. do not stir the liquid.
  • 2 bring to a boil until the syrup takes on a darkish-brown color.
  • 3 pour a layer of the syrup into a large cake mold or into small individual aluminum containers and allow to cool.
  • 4 make the cream: bring the milk to a boil. in a separate bowl, lightly beat the eggs and the sugar adding in the salt and the vanilla.
  • 5 continue to beat the mixture while slowly adding the warm milk.
  • 6 pour the mixture into another bowl, passing it through a sifter to filter out any clumps.
  • 7 skim out any foam left on the surface.
  • 8 layer the cake mold or evenly distribute into the individual forms.
  • 9 place molds into a deep pan and place in a water bath.
  • 10 bake at 350°f for 35 minutes.
  • 11 make the karydopita: beat eggs and sugar until lightly frothy.
  • 12 in a separate bowl, mix the walnuts, bread crumb, cinnamon, cloves, and baking powder.
  • 13 with a wooden spoon mix into the egg-sugar mixture, folding in all the ingredients.
  • 14 distribute evenly into the molds of the half-baked crème slowly in order not to disturb the consistency of the crème and continue to bake for another 35 minutes.
  • 15 remove, cool to room temperature and chill for 5-6 hours.
  • 16 to serve, place the molds into hot water to loosen and invert the mold onto the service plate. if only one large mold was used, pour half a cup of water into it and bring the remaining sugar syrup to a boil and pour over the cake.

Banana Split Bread

  • 3 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup shortening
  • 1 1/4 cups granulated sugar
  • 4 eggs
  • 1 1/2 cups bananas, ripe, mashed (about 4 medium bananas)
  • 2 (8 ounce) cans crushed pineapple, drained
  • 2 cups semi-sweet chocolate chips
  • 1 (10 ounce) jar red maraschino cherries, well drained, chopped
  • 1 cup walnuts, chopped

Recipe

  • 1 preheat oven to 350 degrees f & grease two 9"x5" loaf pans.
  • 2 in a bowl, whisk together the flour, baking powder, baking soda & salt, then set aside.
  • 3 in a large bowl, cream shortening & sugar until light & fluffy, then add eggs, one at a time, beating well after each addition.
  • 4 add the flour mixture, a little at a time, to the creamed mixture, alternately with the bananas & pineapple.
  • 5 fold in the chocolate chips, cherries & nuts, then pour into the prepared loaf pans.
  • 6 bake for 60-65 minutes or until a toothpick inserted near the center comes out clean.
  • 7 cool for 10 minutes before removing from pans to a wire rack to cool completely.

Kookoo Sabzi

Ingredients

  • Servings: 3
  • 8 eggs
  • 1 teaspoon flour
  • 1 tablespoon red currants
  • 1/3 cup finely chopped walnuts
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cooking oil or 1/4 cup butter
  • 1/2 cup finely chopped fresh chives or 1/2 cup scallion
  • 2 cups finely chopped fresh parsley
  • 1/2 cup fresh coriander or 2 tablespoons dried coriander
  • 1/4 cup fresh dill weed or 1/4 cup dried dill weed
  • 1/2 tablespoon dried fenugreek seeds

Recipe

  • 1 soak the currants in cold water for 15 minutes before cooking.
  • 2 drain before adding them in.
  • 3 in a bowl add the eggs, 1/2 of the cooking oil and all other ingredients, with the exception of fresh and dried vegetables.
  • 4 beat it with a fork until the ingredients have been mixed well.
  • 5 add the vegetables, and stir the mixture until the vegetables have blended in (do not beat it any longer due to the delicate nature of fresh vegetables).
  • 6 put the oven setting to bake at 250 degrees (f).
  • 7 pour the remainder of the cooking oil in an oven safe dish.
  • 8 pour the vegetable mixture in the dish.
  • 9 bake at this setting for about 40-45 minutes.
  • 10 you may cover the dish with aluminum foil at the beginning to prevent over-drying of the top crust.
  • 11 remove the foil half way during the baking process.
  • 12 cut in square pieces before serving.

Karithopita, Walnut Cake

Ingredients

  • 4 ounces butter, unsalted
  • 1/4 cup berry sugar
  • 4 eggs, separated
  • 1 1/2 cups flour
  • 4 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 pinch salt
  • 2 cups walnuts, finely chopped
  • 1 1/2 cups sugar
  • 1 1/2 cups water
  • 1 piece cinnamon bark (3-4")
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon brandy

Recipe

  • 1 cream the butter& sugar until light& fluffy.
  • 2 add egg yolks, beat well.
  • 3 sift together the flour, baking powder, cinnamon& salt.
  • 4 beat egg whites stiff.
  • 5 fold the flour into the butter/sugar then mix in about 1/3 of the egg whites.
  • 6 fold in the groung walnuts and then fold in the last of the egg whites, use a metal spoon to blend mixture well, evenly and quickly.
  • 7 spread in a buttered 9x12 cake pan and bake in 350f oven for 45 minutes or until cake is done.
  • 8 meanwhile dissolve the sugar in the water over medium heat add cinnamon bark& lemon juice and bring to a boil, boil for 10 minutes.
  • 9 remove from heat, remove bark, stir in the brandy& cool.
  • 10 pour cold syrup over the hot cake and let the cake cool.
  • 11 cut into squares or diamonds.
  • 12 serve with whipped cream.

Otis Spunkmeyer's Chocolate Chip Cookies

Ingredients

  • 1/2 cup butter
  • 1/2 cup vegetable shortening
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 3 teaspoons vanilla
  • 2 3/4 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 (12 ounce) package chocolate chips (2 cups)

Recipe

  • 1 combine flour and baking powder in a small bowl, mix with a whisk, and set aside.

  • 1/2 cup maple syrup
  • 2 eggs, separated
  • 1/4 teaspoon salt
  • 1 (2 1/2 teaspoon) envelope gelatin
  • 1/4 cup cold water
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon black walnut extract (optional)
  • 1 cup whipping cream
  • 1/4 finely chopped walnuts
  • 1 baked graham cracker crust or 1 flour pie crust

Recipe

  • 1 heat maple syrup and add to beaten egg yolks in a double boiler. stirring constantly cook until thickened. add salt.
  • 2 soak gelatin in cold water and add to hot egg yolk mixture, mixing well. let cool to room temperature until just beginning to set.
  • 3 beat egg whites until frothy. add sugar(with vanilla added) gradually and beat until stiff, but not dry.
  • 4 whip cream. gently fold in egg and whipped cream to cooled egg yolk mixture.

  • 1 (1 1/4 ounce) packet active dry yeast
  • 1/4 cup sugar
  • 3/4 cup milk, warmed
  • 4 egg yolks
  • 4 tablespoons butter, softened
  • 3 1/2 cups flour
  • 1 lemon zest
  • 1 pinch salt
  • 2 tablespoons dark rum
  • 1 cup raisins
  • 6 prunes, pitted, chopped
  • 6 dried figs, chopped
  • 2 ounces dark rum
  • 3/4 cup pine nuts, finely chopped

  • 4 preheat oven to 375°f roll out risen dough on a lightly floured surface into a 12x16-inch rectangle. brush around edges with beaten egg, then spread filling evenly over dough, avoiding edges. working from long side, roll up dough jelly-roll style, then curl into a spiral. place on a baking sheet, cover with a kitchen towel, and set aside to rise for 30 minutes.
  • 5 brush with egg, sprinkle with remaining 1 tablespoons sugar, and bake until browned, about 50 minutes.

  • 1 cup vegetable oil
  • 1 cup sugar
  • 3 1/2 cups flour
  • 1 cup chocolate chips
  • 1 cup walnuts
  • 1 cup dried sweetened cranberries (optional)
  • 1/2 cup granulated sugar
  • 1 tablespoon cinnamon

Recipe

  • 1 preheat oven to 350°f
  • 2 mix the eggs with the oil and sugar. gradually add in the flour. once this is throughly mixed together, add the walnuts, chocolate chips (and cranberries, if used), mixing with your hands.
  • 3 in a bowl, mix sugar and cinnamon.
  • 4 oil 3 rimmed cookie sheets. lay out the dough, separating into 3 equal balls. press each into a 1"-thick rectangle. sprinkle the top with sugar and cinnamon. bake for 30 minutes.
  • 5 take the tray out, slice them into long strips, and turn them on their sides. bake for another 7-10 minutes.

Koo Koo Sabzi

  • 1 bunch cilantro, coarsely chopped
  • 2 bunches italian parsley, coarsely chopped
  • 2 tablespoons dill
  • 10 ounces frozen spinach, chopped
  • 3/4 cup onion, chopped
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 teaspoon turmeric
  • 1/2 cup dried cranberries (or barberries, if you can access them!)
  • 1/2 cup walnuts, toasted
  • 3 eggs (you may use 4 if your herb bunches are bountiful)

Recipe

  • 1 cook spinach and drain well.
  • 2 in a large bowl, combine spinach, cilantro, parsley, dill, and onion.
  • 3 in a small bowl, crack three eggs and whisk with a fork. pour eggs into large bowls with herbs. mix to combine.
  • 4 you do not want an eggy consistency. the egg is used to combine the herbs together. the herbs should look very glossy from the egg, not swimming in it! from here gauge if you need to crack another egg and add it to your mix.

  • 1 1/3 cups sugar
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • 2 eggs, lightly beaten
  • 1 1/2 cups bananas, mashed
  • 1/2 cup sour cream
  • 1 cup walnuts, chopped

Recipe

  • 1 cream butter; gradually add sugar, beating with a mixer at medium speed.
  • 2 combine flour with baking powder, baking soda, and salt, stirring well.
  • 3 combine eggs, banana, and sour cream; stir well.
  • 4 add flour to creamed mixture, alternately with banana mixture, beginning and ending with flour mixture. mix until blended after each addition; stir in walnuts.
  • 5 pour batter into greased and floured 9 x 5 x 3-inch loaf pan.
  • 6 bake at 350 degrees for 1 hour and 15 minutes or until a wooden pck inserted in center comes out clean. (shield with aluminum foil to prevent excessive browning.).

  • 1 lb sharp cheddar cheese, grated fine
  • 1/4 cup port wine
  • 4 garlic cloves (minced )

Recipe

  • 1 mix cheeses together in a food processor.
  • 2 mix in garlic and nuts.
  • 3 chill several hours.
  • 4 roll into ball and roll in minced nuts.

Karen's Molasses Crinkles

Ingredients

  • Servings: 48
  • 3/4 cup soft shortening
  • 1 cup packed brown sugar
  • 1 egg
  • 1/4 cup molasses
  • 2 1/4 cups flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon clove
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger

Recipe

  • 1 mix first four ingredients; then sift and stir in remaining ingredients.
  • 2 chill dough.
  • 3 roll into balls the size of large walnuts.
  • 4 dip tops in sugar.
  • 5 place sugared side up, 3" apart on greased baking sheet.
  • 6 sprinkle each cookie with 2-3 drops of water to produce a cracked surface.
  • 7 bake until set, not hard, 10-12 minutes, at 375°.
  • 8 yield: 4 doz.
  • 9 cookies.

Garden Fresh Zucchini Bread

Ingredients

  • 1 cup walnuts
  • 1 medium zucchini (should produce 1 1/2 cups when shredded)
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 1/2 cups all-purpose flour

Recipe

  • 1 preheat oven to 350°f grease and flour a 9 x 5 loaf pan.
  • 2 chop or slice walnuts (i use the food processor slicer blade) and set aside.
  • 3 shred zucchini and set aside.
  • 4 in a food processor bowl (with knife blade), or mixer bowl, add oil, sugar, eggs, vanilla, baking soda, cinnamon, salt, and baking powder. process or mix until just blended.
  • 5 add flour to the bowl. process or mix just until incorporated into the batter.
  • 6 add zucchini and walnuts, and stir by hand just until they're mixed in . pour batter into the loaf pan and bake until the loaf tests done, about 1 1/4 hours.

Karidopita (greek Nut Cake)

  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup peanut oil
  • 1 1/3 cups buttermilk, with the yellow flakes
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 cup spiced rum
  • 2 cups finely chopped walnuts
  • 2 1/2 cups sugar
  • 1 1/4 cups water
  • 1 1/2 teaspoons cinnamon
  • 2 medium sized lemon slices, diced and smashes, saving all of the juices
  • 2 medium sized orange slices, diced and smashed, saving all of the juices
  • 1/2 cup spiced rum
  • 1/2 cup finely chopped walnuts

  • 1 cake:.
  • 2 blend eggs and sugars.
  • 3 add peanut oil, buttermilk and rum.
  • 4 mix thoroughly.

  • 13 simmer gently for 10 minutes occasionally whisking to prevent clumps.
  • 14 cool before pouring over the cake squares.

  • 16 if you prefer a little more kick in your syrup, whisk 1/2 cup rum in after cooled, before topping cake.
  • 17 i do not recommend children having any with an extra kick.

Raspberry Pinwheels

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 cup margarine, softened
  • 1 cup sugar
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/4 cup seedless raspberry jam
  • 1 cup walnuts, finely chopped

Recipe

  • 1 sift flour, baking powder, beat together margarine, sugar, and egg in another large bowl till fluffy --
  • 2 stir in vanilla, gradually add flour mixture, stirring till well combined.
  • 3 roll dough between 2 pcs of wax paper to 12x10 rectangle.
  • 4 remove top piece of wax paper.spread jam over entire surface od dough.sprinkle with nuts, firmly roll up dough from long side.
  • 5 remove wax paper --
  • 6 reroll in wax paper and refrigerate dough overnight in the refrigerator --
  • 7 preheat oven to 375*.
  • 8 cut roll into generous 1/4" slices.with sharp knife.
  • 9 place on ungreased cookie sheet -- 2" apart.
  • 10 bake 9 minutes or golden brown.do not overbake --

Karithopasta - Greek Walnut Syrup Cake

Total Time: 55 mins Preparation Time: 20 mins Cook Time: 35 mins

Ingredients

  • 250 g butter (butter tastes better but margarine is fine)
  • 1 cup sugar
  • 5 eggs
  • 1/3 cup liqueur (brandy, orange or whatever you like)
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 2 1/2 teaspoons baking powder
  • 2 cups breadcrumbs
  • 1 cup finely ground walnuts
  • 2 cups water
  • 1 cup sugar
  • 2 pieces lemon peel
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla essence (optional)
  • sweetened whipped cream (to decorate)
  • chocolate shavings (to decorate)

Recipe

  • 1 grease a 22cm by 35 cm pan with butter or margarine. do not line with baking paper or use non-stick sprays.
  • 2 beat butter in a medium bowl until softened and add sugar beating until light and fluffy.
  • 3 in a separate bowl combine breadcrumbs, spices and baking powder.
  • 4 add eggs one at a time to the butter mixture, beating well after each addition and then the liqueur.
  • 5 add dry ingredients to butter mixture and beat until combined.
  • 6 finally add the walnuts and beat until just combined.
  • 7 tip into baking pan and smooth evenly over bottom.
  • 8 bake on the bottom rack of the oven at 200c for 30-35 minutes depending on how hot your oven is.
  • 9 test cake by inserting skewer and allow to cool until room temperature.
  • 10 while cake is cooling add ingredients for syrup into a small saucepan, except for vanilla essence.
  • 11 boil for 5 minutes at medium heat. then take off heat and add the vanilla essence if desired.
  • 12 pour hot syrup over cooled cake. start by ladling slowly from one end to another and gently tip remaining syrup over cake trying to be as even as possible.
  • 13 allow cake to soak syrup for a few hours. it is best if it soaks overnight.
  • 14 cut cake into diamonds to serve with a swirl of whipped sweetened cream (i add a bit of vanilla essence or liqueur to the cream) and flaked chocolate.
  • 15 note: it is beat to start with all ingredients at room temperature to avoid butter curdling when eggs are added.

Italian Cannoli Ricotta Cheese Filling

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • 2 lbs ricotta cheese, drained
  • 4 ounces cool whip
  • 8 tablespoons powdered sugar
  • 1 -2 teaspoon vanilla or 1 -2 teaspoon orange extract
  • chopped walnuts, mini chocolate chips, sprinkles

Recipe

  • 1 whip the ricotta to a smooth consistency.
  • 2 add the cool whip and powdered sugar.
  • 3 whip again to combine ingredients, scrapping down the side of the bowl during mixing.
  • 4 chill for a few hours before filling your shells.
  • 5 i like to split the filling into three bowls and mix in some chopped nuts in one bowl, mini chocolate chips in another and leave the third one plain.
  • 6 to fill the cannoli's, i find it easiest to fill a decorators bag and pipe the filling into the shells.

Kookoo (kuku)-ye Sabzi

  • 1 in a large bowl, toss chopped herbs, scallions, half of the walnuts, spinach, half of the barberries, and flour.
  • 2 in another bowl, whisk eggs with saffron and season with salt and pepper.
  • 3 heat oil in a large, nonstick frying pan over medium heat.
  • 4 when oil is hot, slowly pour in egg mixture, stirring in herb mixture into the center of the egg mixture.
  • 5 shake to loosen base, reduce heat to medium-low, cover loosely, and leave to cook very gently for 5-6 minutes (reminder: if the heat is too high, eggs may become leathery.) as omelet cooks, shake to loosen base, and neaten sides with a spatula to build up a deep, straight edge.
  • 6 when the top looks set, invert a large plate over the pan and flip the whole pan over so the omelet ends up on the plate, cooked side up.

  • 2 heat heavy cream, butter and sugar in medium saucepan over medium heat to a gentle boil. remove from heat. add chopped chocolate and let stand 30 seconds. whisk until smooth. stir in cognac.

  • 1 leave the mix of fermented yeast water in a warm place (30-40°c) for 10 minutes.
  • 2 after 10 minutes, sieve the flour then add the salt, milk, and yeast water.
  • 3 mix them well and cover the bowl with wrap. ferment it in a warm place for 3 hours.
  • 4 when the dough is ready, put some oil on your hands (anti stick purpose) and separate an adequate amount of the dough (to allow 6 to be made), then put it on your hand.

  • 1 pint candied fruit
  • 1 lb marshmallows
  • 1 lb raisins
  • 4 cups nuts (walnuts, pecans, almonds)

  • 1 scald milk over low heat. add marshmallows stirring until smooth, remove from heat. put graham crackers in a bag and crush with a rollling pin. mix crumbs with raisins and mixed fruit. add nuts, marshmallow mixture and blend. it will feel very gooey at this point. line loaf pans with wax paper. add mixture and press it down with spoon to shape. decorate top with candied pineapple and cherries if you wish. let this age a month. sprinkle with sherry or brandy twice a week while aging. keep in a cool place, note: when pouring on liquid, poke hole with an ice pick so that the liquid can drain into the cake.

Maple Nut-filled Dates

Ingredients

  • 10 medjool dates
  • 1/4 cup soft cheese (see note above)
  • 1 tablespoon butter
  • 1/4 cup chopped walnuts
  • 1/4 cup maple syrup

Recipe

  • 1 cut dates in half lengthwise and remove pits. spoon about 1/2 teaspoon cheese into the cavity of each date half. arrange dates on a serving plate.
  • 2 melt butter in a 1- to 2-quart pan over low heat, then increase heat to medium and cook until butter is foamy and starting to brown. add nuts and stir constantly for 1 minute. add syrup and reduce heat to maintain a simmer. cook 1 minute, stirring frequently. remove from heat.
  • 3 lift nuts from the syrup with a slotted spoon and press a few pieces into the soft cheese in each date. drizzle syrup over the dates and serve warm.

  • 1 preheat oven to 375 degrees and grease 8 (4 inch) pie tins. in a medium mixing bowl stir together flour, baking soda, and salt, set aside.
  • 2 in a large mixing bowl with an electric mixer on medium speed cream butter and sugars until fluffy. beat in eggs, one at a time, and vanilla. on low speed gradually add flour mixture and mix just until blended. stir in chocolate chips and walnuts.
  • 3 divide dough between prepared pie tins and place onto a baking sheet. bake for 20 minutes. serve panookies immediately with a scoop of ice cream.

Raspberry Spinach Salad With Garlic Steak

  • 1 large garlic clove, minced
  • 1 tablespoon minced onion (dried or fresh)
  • 2 teaspoons coarse black pepper
  • 1 tablespoon kosher salt (or other coarse salt)
  • 1 tablespoon fresh thyme leave
  • 2 tablespoons olive oil
  • 1 1/3 lbs top sirloin steaks
  • 1/2 cup raspberry balsamic vinegar
  • 1 pint fresh raspberry, divided
  • 1/4 cup honey
  • 1/3 cup sugar
  • 2 tablespoons fresh oregano leaves (or 1/2 cup fresh basil leaves)
  • 3/4 cup extra virgin olive oil
  • 6 ounces fresh baby spinach
  • 1/3 cup walnuts, chopped
  • 1/2 cup gorgonzola, crumbled

  • 1 preheat grill or broiler.
  • 2 in a small bowl, mix together the pepper, garlic, onion, salt and thyme. rub olive oil all over the meat. rub seasoning mixture all over the meat. place in a shallow dish and marinate at room temperature for about an hour, or while preparing the remaining salad and vinaigrette. (can also cover and marinade in the fridge for up to 2 days. remove meat from fridge an hour before grilling).
  • 3 put walnuts in a small pan over med-low heat. let toast until you can smell them (while you are preparing the remaining recipe).
  • 4 in a blender or food processor, combine raspberry vinegar, 1/4 cup raspberries, honey, and oregano (or basil); whirl 1 minutes or until well blended. with the motor on, add olive oil in a slow steady stream, whirling until dressing is smooth.
  • 5 grill steak about 3-4 minutes per side or until done to your preference. (using a meat thermometer - rare: 120f; medium rare: 125f; medium: 130f).
  • 6 when the steaks are done to your liking, remove from oven, let sit 15 minutes before serving (meat temperature will rise 5 to 10 degrees after it is removed from the oven). slice steak across grain into 1/4-inch slices.
  • 7 while steaks are resting, prepare salad by layering equally on each plate the spinach, remaining raspberries, walnuts and cheese. place strips of steak on top of each salad. serve dressing on the side.
