Best Banana Nut Bread

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2/3 cup sugar
  • 1/3 cup shortening
  • 2 eggs
  • 2 tablespoons milk
  • 1 cup ripe banana, mashed
  • 1/4 cup pecans or 1/4 cup walnuts, chopped

Recipe

  • 1 preheat oven to 350 degrees fahrenheit
  • 2 in a small bowl stir together flour,baking powder, salt and baking soda;set aside.
  • 3 in a large bowl cream sugar and shortening with an electric mixer until light,scraping the sides of the bowl often with a rubber spatula.
  • 4 add the eggs ,one at a time, and the milk beating until smooth and fluffy after each addition.
  • 5 add the flour mixture and mashed banana alternately to creamed mixture,beating until smooth after each addition.
  • 6 gently fold in the chopped pecans or walnuts.
  • 7 turn batter into lightly greased 8"x4"x2" loaf pan.
  • 8 bake in preheated oven for 60 to 65 minutes or until wooden toothpick inserted near center comes out clean.
  • 9 cool in the pan for 10 minutes.
  • 10 remove from pan;cool thoroughly on a wire rack.
  • 11 for easier slicing, wrap the loaf in foil and store overnight.
