California Salad, Starring Salmon

Ingredients

- 1/4 cup mayonnaise
- 2 tablespoons olive oil
- 1/2 teaspoon dijon mustard
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon chopped parsley
- 1 tablespoon chopped basil
- 1 (6 ounce) can salmon, drained and broken up
- 1/2 cup walnuts, toasted
- 1/2 cup red seedless grapes, quartered
- 3 green onions, sliced
- salt
- 4 cups mixed baby greens
Recipe
- 1 dressing: in a measuring cup, whisk together mayo, oil, mustard, salt, pepper, parsley and basil.
- 2 salad: in a bowl, combine salmon, walnuts, grapes and onions. add dressing and toss to coat. season to taste with salt.
- 3 place greens on a serving platter. spoon salmon over top. serve.
