California Salad, Starring Salmon

Ingredients

  • Servings: 4
  • 1/4 cup mayonnaise
  • 2 tablespoons olive oil
  • 1/2 teaspoon dijon mustard
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped basil
  • 1 (6 ounce) can salmon, drained and broken up
  • 1/2 cup walnuts, toasted
  • 1/2 cup red seedless grapes, quartered
  • 3 green onions, sliced
  • salt
  • 4 cups mixed baby greens

Recipe

  • 1 dressing: in a measuring cup, whisk together mayo, oil, mustard, salt, pepper, parsley and basil.
  • 2 salad: in a bowl, combine salmon, walnuts, grapes and onions. add dressing and toss to coat. season to taste with salt.
  • 3 place greens on a serving platter. spoon salmon over top. serve.
