Peachy Cheesecake

Total Time: 5 hrs Preparation Time: 1 hr Cook Time: 4 hrs

Ingredients

  • 1 cup graham wafer crumbs
  • 1/4 cup sugar
  • 1/3 cup melted butter
  • 1/4 cup crushed walnuts or 1/4 cup pecans or 1/4 cup almonds
  • 8 ounces cream cheese, softened
  • 1 cup icing sugar
  • 1 cup whipping cream
  • 2 firm peaches, chopped,drained of excess juice
  • 3 ripe peaches, mashed
  • 1/2 cup sugar
  • 1 envelope unflavored gelatin

Recipe

  • 1 for crust: combine crumbs, suugar, butter& nuts, if using.
  • 2 press into a greased 8x8x2 inch pan.
  • 3 bake at 350 for 8-10 minutes.
  • 4 cool.
  • 5 for filling: beat cream cheese and icing sugar until smooth& creamy;set aside.
  • 6 in separate bowl, using clean beaters, beat whipping cream until stiff; fold into cream cheese mixture.
  • 7 stir in chopped peaches.
  • 8 spread over cooled crust.
  • 9 for topping: stir 1/2 cup sugar into mashed peaches;let set until sugar dissolves, stirring occasionally.
  • 10 dissolve gelatin according to package directions;stir into peach mixture.
  • 11 spread over cream cheese filling.
  • 12 refrigerate until set.
  • 13 may be topped with whipped cream if desired.
