Peachy Cheesecake

Ingredients
- 1 cup graham wafer crumbs
- 1/4 cup sugar
- 1/3 cup melted butter
- 1/4 cup crushed walnuts or 1/4 cup pecans or 1/4 cup almonds
- 8 ounces cream cheese, softened
- 1 cup icing sugar
- 1 cup whipping cream
- 2 firm peaches, chopped,drained of excess juice
- 3 ripe peaches, mashed
- 1/2 cup sugar
- 1 envelope unflavored gelatin
Recipe
- 1 for crust: combine crumbs, suugar, butter& nuts, if using.
- 2 press into a greased 8x8x2 inch pan.
- 3 bake at 350 for 8-10 minutes.
- 4 cool.
- 5 for filling: beat cream cheese and icing sugar until smooth& creamy;set aside.
- 6 in separate bowl, using clean beaters, beat whipping cream until stiff; fold into cream cheese mixture.
- 7 stir in chopped peaches.
- 8 spread over cooled crust.
- 9 for topping: stir 1/2 cup sugar into mashed peaches;let set until sugar dissolves, stirring occasionally.
- 10 dissolve gelatin according to package directions;stir into peach mixture.
- 11 spread over cream cheese filling.
- 12 refrigerate until set.
- 13 may be topped with whipped cream if desired.
