Light Fruitcake Ii

Ingredients

  • 1 1/2 teaspoons lemon juice
  • 1 1/2 cups seedless raisins
  • 1 1/2 cups golden raisins
  • 1 cup walnuts
  • 1/2 lb mixed fruit, flour it
  • 2/3 cup butter
  • 2 cups sugar
  • 3 eggs, beaten
  • 3 cups flour, sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk

Recipe

  • 1 cook raisins in water 10 minutes and then drain, cool and set aside. cream butter and sugar, add beaten eggs, beat well.
  • 2 add flour, baking powder and salt, sifted together.
  • 3 add milk, lemon juice and mixed fruit; mix together raisins, walnuts, blending well.
