Momma Jean's Carrot Cake

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • 1 1/2 cups oil
  • 2 cups brown sugar
  • 4 eggs
  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 3 cups shredded carrots
  • 1 cup chopped walnuts
  • 1/4 cup butter
  • 4 ounces cream cheese
  • 1 teaspoon vanilla
  • 2 cups icing sugar

Recipe

  • 1 mix oil and sugar, add eggs one at a time mixing well after each. add dry ingredients to wet, mixing well. add carrots and nuts. pour in 9 x13" pan. bake at 300 degrees fahrenheit for 50 minute
  • 2 for icing blend butter, cream cheese and vanilla. add icing sugar a little at a time until smooth.
  • 3 wait for cake to cool, top with icing and sprinkle some chopped walnuts on top.
