Momma Jean's Carrot Cake

Ingredients
- 1 1/2 cups oil
- 2 cups brown sugar
- 4 eggs
- 2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 3 cups shredded carrots
- 1 cup chopped walnuts
- 1/4 cup butter
- 4 ounces cream cheese
- 1 teaspoon vanilla
- 2 cups icing sugar
Recipe
- 1 mix oil and sugar, add eggs one at a time mixing well after each. add dry ingredients to wet, mixing well. add carrots and nuts. pour in 9 x13" pan. bake at 300 degrees fahrenheit for 50 minute
- 2 for icing blend butter, cream cheese and vanilla. add icing sugar a little at a time until smooth.
- 3 wait for cake to cool, top with icing and sprinkle some chopped walnuts on top.
