Rhubarb Nut Bread

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 1 1/2 cups brown sugar
  • 1 egg, beaten
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 1/2 cups rhubarb, cut in small pieces
  • 2/3 cup vegetable oil
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 2 1/2 cups flour
  • 1/2 cup walnuts, chopped
  • 1 tablespoon butter
  • 1/3 cup sugar

Recipe

  • 1 preheat oven to 350.
  • 2 combine brown sugar, oil and beaten egg.
  • 3 in a small bowl, mix the milk, baking soda, salt and vanilla.
  • 4 add milk mixture to sugar.
  • 5 mix alternately with flour, beating well after each addition.
  • 6 fold in rhubarb and nuts.
  • 7 distribute batter into 2 greased and floured 8x4x3 inch loaf pans.
  • 8 sprinkle with topping.
  • 9 bake for approximately 1 hour.
