Pumpkin Maple Cream Cheese Muffins

Ingredients

  • Servings: 12
  • 4 ounces cream cheese, softened
  • 2 tablespoons brown sugar
  • 1 1/2 teaspoons maple flavoring
  • 2 cups flour
  • 3/4 cup brown sugar
  • 1/2 cup chopped walnuts
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 cup pumpkin puree
  • 3/4 cup evaporated milk
  • 1/4 cup vegetable oil
  • 2 teaspoons maple flavoring

Recipe

  • 1 for cream cheese filling combine cream cheese, brown sugar and maple flavoring in a small bowl until blended. set aside.
  • 2 for muffins combine flour, brown sugar, walnuts, baking powder, cinnamon, baking soda and salt in a large bowl.
  • 3 combine eggs, pumpkin, evaporated milk, oil and maple flavoring; mix well.
  • 4 add pumpkin mixture to flour mixture, mixing until just blended.
  • 5 spoon into 12 greased muffin cups. dollop 1 heaping teaspoon of cream cheese filling into center of each cup, pressing into batter slightly.
  • 6 bake in preheated 400 oven for 20-25 minutes or until done.
