Mincemeat Cake

Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 8 tablespoons unsalted butter, at room temperature (1 stick)
- 1/2 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 cup mincemeat (jarred)
- 1 cup walnuts, chopped
Recipe
- 1 preheat oven to 325°f line a 9-inch round cake pan with parchment paper and butter the paper.
- 2 sift together the flour, baking powder, baking soda and salt. set aside.
- 3 cream together the butter and sugars in a large bowl. whisk in egg until well blended.
- 4 mix the dry ingredients, a little at a time, into the butter mixture, making sure each addition is fully incorporated before adding more.
- 5 stir in the mincemeat and walnuts, until evenly distributed.
- 6 spread batter into prepared pan and bake about 1 hour, or until knife inserted in center comes out clean. cool slightly in pan on wire rack.
- 7 serve warm, with vanilla ice cream or a custard sauce, or plain like a snack cake.
