Lettuce, Raisin And Walnut Salad With Creamy Raspberry Dressing

Ingredients

  • Servings: 6
  • 1 cup fresh raspberry
  • 3 tablespoons raspberry vinegar
  • 1 tablespoon sugar
  • 1/4 cup vegetable oil
  • 3 tablespoons heavy cream, chilled
  • 2 heads bibb lettuce, torn into bite-size pieces
  • 1/2 cup raisins
  • 2 ounces walnuts, toasted
  • salt
  • pepper

Recipe

  • 1 mash 1/2 cup raspberries through a fine sieve set over a bowl. press and extract as much pulp as possible.
  • 2 add vinegar and sugar to pulp and stir to dissolve.
  • 3 whisk in oil and cream.
  • 4 combine lettuce, raisins and nuts in a large bowl.
  • 5 lightly coat lettuce leaves with dressing, add salt and pepper to taste; toss.
  • 6 divide among plates and sprinkle with remaining raspberries.
