Lettuce, Raisin And Walnut Salad With Creamy Raspberry Dressing

Ingredients

- 1 cup fresh raspberry
- 3 tablespoons raspberry vinegar
- 1 tablespoon sugar
- 1/4 cup vegetable oil
- 3 tablespoons heavy cream, chilled
- 2 heads bibb lettuce, torn into bite-size pieces
- 1/2 cup raisins
- 2 ounces walnuts, toasted
- salt
- pepper
Recipe
- 1 mash 1/2 cup raspberries through a fine sieve set over a bowl. press and extract as much pulp as possible.
- 2 add vinegar and sugar to pulp and stir to dissolve.
- 3 whisk in oil and cream.
- 4 combine lettuce, raisins and nuts in a large bowl.
- 5 lightly coat lettuce leaves with dressing, add salt and pepper to taste; toss.
- 6 divide among plates and sprinkle with remaining raspberries.
