Perfect Zucchini Bread

Ingredients
- 3 cups shredded zucchini
- 1 2/3 cups sugar
- 2/3 cup vegetable oil
- 4 eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1 teaspoon salt
- 1/2 cup walnuts, chopped
- 1/2 cup raisins
Recipe
- 1 preheat oven to 350 degrees. grease only the bottoms of two 8 by 4 inch loaf pans.
- 2 in a large mixing bowl stir together zucchini, sugar, oil, eggs, and vanilla. stir in flour, baking soda, baking powder, cinnamon, cloves, and salt. mix in walnuts and raisins.
- 3 divide batter evenly between prepared pans. bake until a toothpick inserted into the center comes out clean, 50 to 60 minutes. cool bread in pans for 10 minutes. loosen the sides of the loaves, remove from pans and place top side up onto cooling racks. cool competley.
