Oatmeal Raisin Cookies

Ingredients

  • Servings: 45
  • 1/2 cup butter
  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1 cup packed brown sugar
  • 2 teaspoons vanilla
  • 1/4 teaspoon almond extract
  • 3/4 teaspoon cinnamon
  • 1/8 teaspoon clove
  • 1/4 teaspoon nutmeg
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 large egg
  • 6 tablespoons light corn syrup
  • 2 tablespoons milk
  • 3 cups quick-cooking oats
  • 1 1/2 cups flour
  • 1 cup raisins
  • 1 cup chopped pecans or 1 cup walnuts

Recipe

  • 1 preheat oven to 375°.
  • 2 in a large bowl, cream together the butter, shortening, sugars, extracts, spices, salt and baking soda, beating until fairly smooth.
  • 3 beat in the egg, scraping the bowl, then beat in the corn syrup and milk. stir in the oats, flour, nuts and raisins.
  • 4 drop the dough by the tablespoonful onto greased baking sheets.
  • 5 bake the cookies for 11 minutes, until they're a light golden brown. remove them from the oven and transfer to a wire rack to cool.
