Pumpkin Bread

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 cup canned pumpkin puree
  • 1/2 cup olive oil
  • 2 eggs, beaten
  • 1/4 cup water
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/2 cup chopped walnuts (optional)

Recipe

  • 1 preheat oven to 350-degrees f and grease a 9x5x3 inch loaf pan.
  • 2 stir together flour, salt, sugar, and baking soda.
  • 3 in a separate bowl, mix the pumpkin, oil, eggs, water, and spices together, then combine with the dry ingredients, until just combined. if using walnuts, gently fold inches
  • 4 pour mixture into loaf pan and bake 50-60 minutes until a toothpick poked in the center comes out clean.
  • 5 turn out of the pan and let cool on a rack. makes one loaf.
