Pecan Carrot Bread Or Muffins

Ingredients

- 1 cup bread flour
- 1 cup whole wheat flour
- 3/4 cup light brown sugar, packed
- 3/4 cup carrot, coarsely grated
- 1/2 cup pecans or 1/2 cup walnuts, coarsely chopped
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 egg, beaten
- 2/3 cup milk
- 1/4 lb unsalted butter, melted & cooled
Recipe
- 1 in a large bowl, combine the flours, sugar, carrots, nuts, baking powder, cinnamon, nutmeg, and salt, and mix thoroughly, breaking up any lumps.
- 2 add the remaining ingredients and mix just until blended (do not over mix).
- 3 for bread: spoon batter into a greased 8.5x4.5" loaf pan.
- 4 bake at 350f until dark golden brown (about 1 hours).
- 5 for muffins: spoon batter into greased muffin cups.
- 6 bake at 350f until golden brown (about 45 minutes).
