Molasses Cake

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • 1 (18 ounce) package spice cake mix (i use duncan hines or betty crocker)
  • 2/3 cup milk
  • 4 eggs
  • 1/4 cup molasses
  • 1 cup chopped walnuts (optional)
  • 1 cup raisins or 1 cup craisins or 1 cup dried fruit (optional)
  • 1 (16 ounce) container prepared frosting
  • 2 tablespoons molasses

Recipe

  • 1 cake: preheat oven to 350 degrees.
  • 2 grease and flour 13 x 9 pan.
  • 3 i use bakers joy spray.
  • 4 in a large bowl combine cake mix, milk, eggs and molasses (and fruit or nuts if using).
  • 5 beat on low for 2 minutes.
  • 6 beat on high for 4 minutes.
  • 7 pour into prepared pan.
  • 8 bake for 35-40 minutes or until center of cake springs back when lightly pressed.
  • 9 cool in pan.
  • 10 frost when completely cool.
  • 11 frosting: in a medium bowl stir molasses into frosting until completely mixed.
  • 12 spread on cake.
