Moist & Spicy Coconut Oatmeal Cake

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • 1 cup oatmeal (regular or quick)
  • 1 1/2 cups boiling water
  • 2 eggs
  • 1/2 cup oil
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1 1/2 cups flour
  • add oatmeal, mix together
  • 1/2 cup melted butter
  • 1 cup chopped walnuts or 1 cup pecans
  • 1 cup brown sugar
  • 1 cup coconut
  • 1 egg

Recipe

  • 1 mix oatmeal and boiling water together first to get things started; beat together eggs/oil/sugar vanilla, then add the rest and mix well.
  • 2 while the cake is in the oven, make the topping; bake the cake in greased 9"x13" cake pan for 35 - 40 minutes at 350 degrees.
  • 3 pull the cake out, spread the topping to completely cover the cake surface, and bake 15 - 20 minutes more. this cake tastes great fresh, but gets even better after waiting for a day.
