Moist & Spicy Coconut Oatmeal Cake

Ingredients
- 1 cup oatmeal (regular or quick)
- 1 1/2 cups boiling water
- 2 eggs
- 1/2 cup oil
- 1 cup sugar
- 1 cup brown sugar
- 1 tablespoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1 1/2 cups flour
- add oatmeal, mix together
- 1/2 cup melted butter
- 1 cup chopped walnuts or 1 cup pecans
- 1 cup brown sugar
- 1 cup coconut
- 1 egg
Recipe
- 1 mix oatmeal and boiling water together first to get things started; beat together eggs/oil/sugar vanilla, then add the rest and mix well.
- 2 while the cake is in the oven, make the topping; bake the cake in greased 9"x13" cake pan for 35 - 40 minutes at 350 degrees.
- 3 pull the cake out, spread the topping to completely cover the cake surface, and bake 15 - 20 minutes more. this cake tastes great fresh, but gets even better after waiting for a day.
