Meatless Loaf

Ingredients
- Servings: 6
- 3 cups fresh breadcrumbs (packed)
- 2 cups walnuts (finely diced)
- 1/2 cup nutritional yeast
- 2 tablespoons tamari (or soy sauce)
- 1/2 cup tomato juice
- 4 tablespoons butter
- 2 1/2 large onions, finely chopped
- 3 -4 large garlic cloves, minced (or a couple of spoonfuls jarred minced garlic)
Recipe
- 1 saute the onions and garlic in the butter (or substitute olive oil).
- 2 combine all of the above ingredients with 2 well-beaten eggs, 1 cup (packed) grated cheddar cheese, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 2 tablespoons dried parsley (or 3/4 cup minced fresh parsley).
- 3 press into a well-oiled loaf pan and bake at 350 for approximately 1 hour.
- 4 cover top of loaf with 1/2 cup grated cheddar cheese.
- 5 bake for an additional 10 minutes or until cheese is bubbly.
- 6 serve as is or with a gravy.
