Meatless Loaf

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 3 cups fresh breadcrumbs (packed)
  • 2 cups walnuts (finely diced)
  • 1/2 cup nutritional yeast
  • 2 tablespoons tamari (or soy sauce)
  • 1/2 cup tomato juice
  • 4 tablespoons butter
  • 2 1/2 large onions, finely chopped
  • 3 -4 large garlic cloves, minced (or a couple of spoonfuls jarred minced garlic)

Recipe

  • 1 saute the onions and garlic in the butter (or substitute olive oil).
  • 2 combine all of the above ingredients with 2 well-beaten eggs, 1 cup (packed) grated cheddar cheese, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 2 tablespoons dried parsley (or 3/4 cup minced fresh parsley).
  • 3 press into a well-oiled loaf pan and bake at 350 for approximately 1 hour.
  • 4 cover top of loaf with 1/2 cup grated cheddar cheese.
  • 5 bake for an additional 10 minutes or until cheese is bubbly.
  • 6 serve as is or with a gravy.
