Maple Oat Banana Bread

Total Time: 1 hr 45 mins Preparation Time: 25 mins Cook Time: 1 hr 20 mins

Ingredients

  • Servings: 12
  • 2 cups flour
  • 1 cup rolled oats, plus extra
  • rolled oats, to sprinkle in the bottom of the pan
  • 2 teaspoons baking soda
  • 1 cup shortening
  • 2 cups sugar
  • 2 cups mashed bananas
  • 4 eggs
  • 1 cup chopped walnuts
  • 1 cup confectioners' sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon maple extract

Recipe

  • 1 grease a tube pan and sprinkle oats on the bottom.
  • 2 mix flour, 1 cup oats and baking soda.
  • 3 cream shortening and sugar in a mixing bowl until light and fluffy.
  • 4 add the80 bananas, eggs and walnuts and mix well.
  • 5 add the flour mixture.
  • 6 beat at low speed until mixed.
  • 7 pour into prepared pan and bake at 350º for 80 minutes or until a toothpick inserted in center comes out clean ~ begin checking for doneness at 1 hour.
  • 8 cool in pan for 5 minutes.
  • 9 invert on wire rack to cool completely.
  • 10 drizzle with maple glaze.
  • 11 maple glaze: combine confectioner's sugar, lemon juice and maple extract in a medium bowl until well mixed. add enough water to form a smooth glaze consistency, stirring constantly.
