Meatless Meatloaf

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1 small onion, finely chopped
  • 1 tablespoon oil
  • 1/2 green pepper, finely chopped
  • 1 (8 ounce) can tomato sauce
  • 1 cup soybeans, cooked
  • 1/2 cup walnuts or 1/2 cup pecans, ground
  • 1 1/2 teaspoons salt
  • 1 1/4 cups onions, chopped
  • 1/2 cup ketchup
  • 1/2 teaspoon basil
  • 1 cup oatmeal
  • 3 eggs
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped parsley
  • 1 (4 ounce) can mushrooms, drained
  • 1 teaspoon oregano

Recipe

  • 1 1 small onion, finely chopped.
  • 2 1 tablespoons oil.
  • 3 1/2 green pepper, finely chopped.
  • 4 1 (8 oz.) can tomato sauce.
  • 5 saute onion and green pepper in oil until lightly browned. add tomato sauce and bring to a boil. boil for 2-3 minutes. set aside.
  • 6 meatloaf:.
  • 7 1 cup soybeans, cooked.
  • 8 1/2 cup walnuts or pecans, ground.
  • 9 1 1/2 teaspoons salt.
  • 10 1 1/4 cup onion, chopped.
  • 11 1/2 cup ketchup.
  • 12 1/2 teaspoons basil.
  • 13 1 cup oatmeal.
  • 14 3 eggs.
  • 15 1/4 teaspoons pepper.
  • 16 2 tablespoons chopped parsley.
  • 17 1 (4 oz.) can mushrooms, drained.
  • 18 1 teaspoons oregano.
  • 19 mash soybeans with fork. add oatmeal, nuts and eggs and mix well. blend mixture with remaining ingredients. place mixture in a greased 9x5x3 loaf pan. top with tomato sauce. bake at 350f for 50 minutes.
  • 20 makes 6 servings.
