Meatless Meatloaf

Ingredients

- 1 small onion, finely chopped
- 1 tablespoon oil
- 1/2 green pepper, finely chopped
- 1 (8 ounce) can tomato sauce
- 1 cup soybeans, cooked
- 1/2 cup walnuts or 1/2 cup pecans, ground
- 1 1/2 teaspoons salt
- 1 1/4 cups onions, chopped
- 1/2 cup ketchup
- 1/2 teaspoon basil
- 1 cup oatmeal
- 3 eggs
- 1/4 teaspoon pepper
- 2 tablespoons chopped parsley
- 1 (4 ounce) can mushrooms, drained
- 1 teaspoon oregano
Recipe
- 1 1 small onion, finely chopped.
- 2 1 tablespoons oil.
- 3 1/2 green pepper, finely chopped.
- 4 1 (8 oz.) can tomato sauce.
- 5 saute onion and green pepper in oil until lightly browned. add tomato sauce and bring to a boil. boil for 2-3 minutes. set aside.
- 6 meatloaf:.
- 7 1 cup soybeans, cooked.
- 8 1/2 cup walnuts or pecans, ground.
- 9 1 1/2 teaspoons salt.
- 10 1 1/4 cup onion, chopped.
- 11 1/2 cup ketchup.
- 12 1/2 teaspoons basil.
- 13 1 cup oatmeal.
- 14 3 eggs.
- 15 1/4 teaspoons pepper.
- 16 2 tablespoons chopped parsley.
- 17 1 (4 oz.) can mushrooms, drained.
- 18 1 teaspoons oregano.
- 19 mash soybeans with fork. add oatmeal, nuts and eggs and mix well. blend mixture with remaining ingredients. place mixture in a greased 9x5x3 loaf pan. top with tomato sauce. bake at 350f for 50 minutes.
- 20 makes 6 servings.
