Cranberry-walnut Granola

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • cooking spray or butter, for greasing pan
  • 4 cups rolled oats
  • 1 cup walnuts, coarsely chopped
  • 1/2 cup sesame seeds
  • 2 teaspoons orange zest, finely grated
  • 1/4 cup evaporated cane juice, crystals
  • 2 teaspoons sea salt, unprocessed
  • 2/3 cup honey or 2/3 cup maple syrup
  • 1/2 cup oil, expeller-pressed
  • 1/2 cup dried cranberries
  • 1/2 cup dried blueberries (optional)

Recipe

  • 1 preheat oven to 325°f prepare a shallow 14x11-inch pan by greasing with cooking spray or butter.
  • 2 in large bowl, thoroughly mix together oats, walnuts, sesame seeds, orange zest, sugar, and salt.
  • 3 in a separate bowl combine the honey and oil. pour over the dry ingredients. thoroughly mix together and spoon into the prepared pan.
  • 4 bake for 30 minutes, turning the pan and stirring every 10 minutes, or until golden brown.
  • 5 remove from oven. mix in the dried cranberries and blueberries, if using, and allow to cool.
