Pesto Chicken Tortollini Salad

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 10
  • 1 lb chicken, boiled and cubed
  • 1 (16 ounce) package cheese tortellini, frozen
  • 1 (10 ounce) envelope pesto sauce mix, knorr
  • 1 pint cherry tomatoes, halved
  • 1 cup walnuts, chopped into pieces
  • 1 cup mayonnaise
  • 2 -3 tablespoons balsamic vinegar

Recipe

  • 1 prepare tortollini according to directions.
  • 2 mix pesto, mayo and vinegar together.
  • 3 add to other ingredients.
  • 4 that's it!
  • 5 feel free to wing it - i usually end up adding more vinegar.
  • 6 the pasta tends to absorb the mayo overnight. you will most likely have to add more mayo to moisted the salad.
