Pesto Genovese

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 400 g penne pasta
  • 40 fresh basil leaves
  • 2 tablespoons parmesan cheese
  • 1/4 cup pine nuts, toasted in the oven
  • 1 clove garlic
  • salt
  • 1 tablespoon unsalted butter
  • 1 walnuts, toasted
  • 2 -3 ounces olive oil

Recipe

  • 1 chop basil in a blender.
  • 2 add the remaining dry ingredients and blend until smooth.
  • 3 through the top, slowly add enough olive oil to bind.
  • 4 pour into a jar.
  • 5 cover with a thin layer of olive oil.
  • 6 store in the refrigerator till needed.
  • 7 when cooking your pasta, save 2-3 tbsp of the cooking water.

  • 10 top with more fresh parmesan cheese.
