Marie's Christmas Cake

Ingredients

  • Servings: 8
  • 3 lbs raisins
  • 1 lb cherries
  • 1 lb dates
  • 4 rings candied pineapple
  • 1/2 lb chopped mixed peel
  • 1 cup liquid honey
  • 5 cups flour
  • 2 teaspoons salt
  • 2 teaspoons baking soda
  • 3 teaspoons cinnamon
  • 2 teaspoons flavoring
  • 1 teaspoon clove
  • 2 teaspoons allspice
  • 2 teaspoons mace
  • 2 teaspoons ginger
  • 1 lb butter
  • 2 cups sugar
  • 12 eggs
  • 1 cup jelly, any flavor
  • 1 lb walnuts

Recipe

  • 1 wash raisins. pour boiling water over them and let stand for a few minutes. drain throughly and dry between towels. chop half the cherries. combine fruit and add honey. mix well and let stand overnight. sift flour, salt, soda and spices.
  • 2 cream butter. add sugar gradually, then add one egg at a time, beating well after each one. break up jelly and add. add flour mixture, nuts, fruit and flavoring. bake in 300 oven.
  • 3 makes a 12 pound cake.
