Gouda Quesadilla With Cilantro-walnut Pesto

Ingredients

- 8 corn tortillas
- 2 cups gouda cheese, grated
- 1 cup cilantro, chopped and stemms removed
- 3/4 cup walnuts, toasted
- 2 garlic cloves
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons lime juice, fresh
Recipe
- 1 place cilantro, walnuts, garlic, salt, pepper, lime juice, and olive oil in a food processor and blend until smooth.
- 2 fill each corn tortilla with 1/4 cup shredded gouda and fold in half. cook on a hot grill or grill pan until cheese is melted, about 1-2 minutes per side.
- 3 serve with the cilantro pesto.
