Gouda Quesadilla With Cilantro-walnut Pesto

Ingredients

  • Servings: 8
  • 8 corn tortillas
  • 2 cups gouda cheese, grated
  • 1 cup cilantro, chopped and stemms removed
  • 3/4 cup walnuts, toasted
  • 2 garlic cloves
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons lime juice, fresh

Recipe

  • 1 place cilantro, walnuts, garlic, salt, pepper, lime juice, and olive oil in a food processor and blend until smooth.
  • 2 fill each corn tortilla with 1/4 cup shredded gouda and fold in half. cook on a hot grill or grill pan until cheese is melted, about 1-2 minutes per side.
  • 3 serve with the cilantro pesto.
