Date Nut Bread

Ingredients
- 3/4 cup boiling water
- 1 1/2 cups chopped dates
- 1 tablespoon butter
- 1/4 cup dark brown sugar
- 1/4 cup molasses
- 2 teaspoons vanilla
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped walnuts
Recipe
- 1 preheat oven to 350f and butter a 9 x 5 loaf pan.
- 2 in a bowl, pour hot water over dates and butter.
- 3 stir and let the mix stand until lukewarm.
- 4 in a food processor, puree 1/3 of the date mixture to make a paste.
- 5 stir paste back into date bowl mixture.
- 6 add brown sugar, molasses, vanilla, and eggs.
- 7 mix until combined.
- 8 in another bowl, sift the all purpose flour, baking powder, baking soda and salt together.
- 9 add whole wheat flour and mix well.
- 10 make a well in the center of the dry ingredients and pour in the date mixture.
- 11 stir until well combined.
- 12 pour batter into prepared loaf pan.
- 13 bake for 50-60 minutes until loaf top has risen.
- 14 remove bread from the oven and cool in the pan on a wire rack for at least 30 minutes before turning out.
