Plum Upside-down Cake

Total Time: 1 hr 10 mins Preparation Time: 15 mins Cook Time: 55 mins

Ingredients

  • Servings: 8
  • 3/4 lb italian plum
  • 1/2 cup butter, melted
  • 1 cup packed light brown sugar, i use brownulated (which is granulated)
  • 1/2 cup chopped walnuts, toasted
  • 1 (18 1/4 ounce) package poundcake mix
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons almond extract

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 pour melted butter into 13x9 pan.
  • 3 sprinkle toasted walnuts and brown sugar evenly in pan.
  • 4 cut plums in half and remove pits, cut each half into 4 pieces and arrange over walnuts, overlapping pieces.
  • 5 prepare cake mix as directed on package, adding vanilla and almond extracts.
  • 6 pour batter over plums.
  • 7 bake at 350 degrees fahrenheit for 40-55 minutes or until toothpick inserted in center of cake comes out clean.
  • 8 remove from oven and immediately loosen edges of cake with a knife.
  • 9 invert cake onto a serving plate.
  • 10 drizzle cake with any remaining brown sugar from cake pan.
