Mom's Carrot Banana Bread

Ingredients

  • Servings: 2
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup brown sugar
  • 1/2 cup butter, softened
  • 3 bananas, mashed
  • 1 cup grated carrots
  • 1 cup walnuts

Recipe

    Preparation Time: 15 mins Cook Time: 50 mins Ready Time: 1 hr 5 mins

  • preheat oven to 350 degrees f (175 degrees c). grease two 4x8-inch loaf pans.
  • combine flour, baking soda, baking powder, cinnamon, and salt together in a bowl. beat brown sugar and butter together in a separate bowl using an electric mixer until smooth and creamy. stir flour mixture, alternating with bananas, into creamed butter mixture just until batter is mixed; fold in carrots and walnuts. pour into the prepared loaf pans.
  • bake in the preheated oven until a toothpick inserted in the center of a loaf comes out clean, 50 to 60 minutes.

  • Servings: 6
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 2 cups quick cooking oats
  • 1/2 cup packed brown sugar
  • 1/2 cup sugar
  • 1 cup shortening
  • 2 eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup raisins
  • 3/4 cup chopped walnuts

Recipe

  • preheat oven to 375 degrees f (or 190 degrees c). grease cookie sheets.
  • put all ingredients except raisins (or chips) and walnuts in food processor. mix well.
  • put in bowl and add raisins and walnuts, stir.
  • drop by teaspoons greased cookie sheets. bake for 12-15 minutes. note: can use parchment paper instead of grease on cookie sheet.

Ingredients

  • Servings: 4
  • 1 cup all-purpose flour
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon superfine sugar
  • 1 cup chopped walnuts
  • 1/3 cup confectioners' sugar for decoration

Recipe

  • preheat oven to 350 degrees f (180 degrees c).
  • mix together all ingredients except the confectioner's sugar. roll dough into small balls and place on cookie sheets.
  • bake for 25 - 30 minutes. roll in confectioner's sugar while cookies are still warm.

Cooky Corn Cake

Ingredients

  • Servings: 1
  • 1 (14.75 ounce) can cream-style corn
  • 1/2 cup packed dark brown sugar
  • 3/4 cup sugar
  • 3 eggs
  • 1 cup vegetable oil
  • 1 tablespoon baking powder
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
  • 4 tablespoons unsalted butter
  • 1/2 cup packed dark brown sugar
  • 1/4 cup heavy whipping cream
  • 2 1/2 cups confectioners' sugar

Recipe

  • preheat oven to 350 degrees f (175 degrees c). grease and flour one 13x9 inch pan.
  • combine the creamed corn with the sugar and 1/2 cup of the dark brown sugar. stir in the eggs and the oil.
  • combine the baking powder, flour, baking soda, salt and ground cinnamon. add the nuts and raisins.
  • add the flour mixture to the corn mixture and stir until just combined. pour batter into the prepared pan.
  • bake at 350 degrees f (175 degrees c) for 30 to 35 minutes. let cake cool completely then frost.
  • to make frosting: bring the butter and 1/2 cup dark brown sugar to a boil. remove from the heat. add the heavy cream and the confectioners' sugar. mix until of frosting consistency. add more confectioners' sugar if necessary. use to frost cooled cake.

  • 3 cups chopped dried figs
  • 2/3 cup raisins
  • 2/3 cup candied cherries, chopped
  • 1 tablespoon honey
  • 2 tablespoons dry
  • 1 tablespoon lemon juice
  • 1 pinch salt
  • 2 1/2 cups chopped walnuts
  • 1 cup unsalted butter, softened
  • 1/2 cup super fine sugar
  • 1/3 cup packed brown sugar
  • 1 egg
  • 2 2/3 cups all-purpose flour
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt

Recipe

  • in a large bowl, combine fruits, honey, sherry, lemon juice, salt and walnuts. cover and marinate overnight.
  • cream together with butter, brown sugar and sugar until smooth. add egg and mix well. combine the flour, salt and cloves; gradually blend into the butter mixture. blend in the fruit and nut mixture
  • lightly flour work surface and divide dough into 2 equal portions. roll into logs and wrap in plastic wrap or waxed paper. place dough in freezer for at least an hour.
  • preheat oven to 350 degrees f (175 degrees c). cut logs into thin rounds and place on cookie sheet spaced at least 1 inch apart.
  • bake 10 to 13 minutes in the preheated oven, or until golden brown.

  • in a large bowl, mix together eggs, flour, sugar, vanilla, and melted butter. mix well. stir in walnuts and chocolate chips.
