Tanya's Date Cake

Ingredients

  • Servings: 1
  • 8 ounces dates, pitted
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 cup chopped walnuts
  • 1 cup butter
  • 1 cup white sugar
  • 3 eggs, beaten
  • 3/4 cup hot water, or as needed

  • preheat oven to 350 degrees f (175 degrees c). grease and flour an 8-inch round springform pan.
  • bring a small saucepan of water to a boil. add dates and cook until softened, about 5 minutes. drain dates and transfer to a food processor. puree dates into a smooth paste.
  • sift together flour and baking soda into a large bowl. stir in chopped walnuts until combined and set aside.
  • beat together butter and sugar in a large bowl with an electric mixer until light and fluffy. slowly add beaten eggs, allowing them to thoroughly blend into the butter mixture. stir in ground dates and mix until combined. pour in flour mixture and stir with a wooden spoon until just incorporated. add 3/4 cup hot water or as needed to thin the batter into a pourable consistency. transfer the batter to the prepared pan.

oatmeal spice cookies

  • preheat oven to 350 degrees f (175 degrees c). grease one 13 x 9 inch baking pan.
  • sift the flour, white sugar and baking soda together.
  • in a saucepan over medium heat bring 1 cup of the butter, 3 tablespoons of the cocoa, and 1 cup of the cola drink to a boil. pour into the flour mixture and stir in the marshmallows, buttermilk and the beaten eggs. pour the batter into the prepared pan.

  • to make coco-cola topping: in a saucepan bring 1/2 cup of the butter or margarine, 6 tablespoons of the cola drink and 3 tablespoons of the cocoa to a boil. remove from the heat and stir in the confectioners' sugar, chopped nuts and vanilla. spread topping over cake while still warm.

  • 3 tablespoons grated orange zest
  • 2/3 cup fresh orange juice
  • 1/3 cup boiling water
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 cup chopped walnuts
  • 1 cup dates, pitted and chopped

  • preheat oven to 350 degrees f (175 degrees c). grease one 9x5x3 inch loaf pan.
  • beat egg slightly. add butter and sugar. beat smooth. zest one orange; set 1 tablespoon zest aside. juice 2 oranges. place juice in a 1 cup measure and add boiling water to fill the cup. stir zest, juice and vanilla into batter.
  • in another bowl, put flour, baking powder, soda, and salt. stir in walnuts and dates. pour over batter. stir to moisten. spoon into greased 9x5x3 inch loaf pan.
  • bake in 350 degree f (175 degree c) oven for 1 hour until it tests done. cool 10 minutes. remove from pan. finish cooling and wrap.
