Gluten-free Chocolate Chip Cookies

Total Time: 17 mins Preparation Time: 5 mins Cook Time: 12 mins

Ingredients

  • 1/2 cup butter
  • 1/4 cup light brown sugar
  • 1/4 cup sugar
  • 1 egg, large
  • 1 teaspoon vanilla
  • 1 1/2 cups pamelas ultimate baking and pancake mix
  • 1 1/2 cups semi-sweet chocolate chips (i used 1 cup of mini chips)
  • 1/2 cup walnuts, chopped (optional)

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 cream butter and sugars, add egg and vanilla, the beat together.
  • 3 add pamela's mix, chocolate chips, and nuts (if using) and mix thoroughly.
  • 4 place scoops of dough (1 tbsp scoop) on a lightly greased cookie sheet.
  • 5 flatten with a spatula.
  • 6 bake for 12-15 minutes, or until edges begin to brown.
  • 7 let cookies cool slightly and then eat!
