Gluten-free Chocolate Chip Cookies

Ingredients
- 1/2 cup butter
- 1/4 cup light brown sugar
- 1/4 cup sugar
- 1 egg, large
- 1 teaspoon vanilla
- 1 1/2 cups pamelas ultimate baking and pancake mix
- 1 1/2 cups semi-sweet chocolate chips (i used 1 cup of mini chips)
- 1/2 cup walnuts, chopped (optional)
Recipe
- 1 preheat oven to 350 degrees.
- 2 cream butter and sugars, add egg and vanilla, the beat together.
- 3 add pamela's mix, chocolate chips, and nuts (if using) and mix thoroughly.
- 4 place scoops of dough (1 tbsp scoop) on a lightly greased cookie sheet.
- 5 flatten with a spatula.
- 6 bake for 12-15 minutes, or until edges begin to brown.
- 7 let cookies cool slightly and then eat!
