Rhubarb Tea Bread

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups brown sugar
  • 2 teaspoons vanilla
  • 2 1/2 cups rhubarb, chopped
  • 1/2 cup walnuts or 1/2 cup pecans, chopped
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice

Recipe

  • 1 beat eggs until thick and foamy.
  • 2 add oil, brown sugar, vanilla.
  • 3 beat well.
  • 4 stir in rhubarb, nuts.
  • 5 add remaining ingredients.
  • 6 mix well.
  • 7 pour into two greased and floured loaf pans.
  • 8 bake at 350° for one hour.
