Lamb And Beans Bread

Ingredients

  • 1 cup raisins
  • 1 cup boiling water
  • 1 cup sugar
  • 3 eggs, beaten
  • 1 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 (15 ounce) can lamb and beans
  • 3 cups flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup walnuts, chopped

Recipe

  • 1 preheat oven to 325 degrees.
  • 2 add raisins to boiling water and set aside to plump.
  • 3 mash beans in a food processor or blender to a very smooth consistency. (take out lamb piece before)
  • 4 transfer beans to a medium mixing bowl.
  • 5 add sugar, eggs, oil and vanilla. mix well.
  • 6 sift together dry ingredients - flour, cinnamon, baking powder and soda - fold into wet ingredients.
  • 7 drain raisins and fold them and walnuts into batter.
  • 8 spoon batter into greased and floured loaf pans (2-3 pans depending on size).
  • 9 bake for 50-60 minutes or until knife inserted in the center comes out clean.
  • 10 delicious served with cream cheese, butter or honey - enjoy!
