Mud Bars

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 1 cup unsalted butter (at room temperature)
  • 2 cups firmly packed light brown sugar
  • 2 eggs
  • 3 cups rolled oats
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon baking soda
  • salt, pinch
  • 1 cup chopped walnuts
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 ounce) package semi-sweet chocolate chips
  • 1 1/2 cups chopped walnuts
  • 2 tablespoons butter
  • 2 teaspoons pure vanilla extract
  • salt, pinch

Recipe

  • 1 preheat oven to 350 degrees
  • 2 generously grease 9x13 pan.
  • 3 cream 1 cup butter with sugar in a large bowl.
  • 4 add eggs, one at a time, beating well after each addition.
  • 5 mix in oats, flour, vanilla, baking soda and salt.
  • 6 stir in 1 cup walnuts and set aside.
  • 7 combine milk and chocolate in top of double boiler set over hot water and stir until chocolate melts.
  • 8 add remaining ingredients and blend well.
  • 9 spoon 2/3 of the oat mixture into prepared pan, compacting with a fork. spread chocolate mixture over top.
  • 10 crumble remaining oat mixture and chocolate and spread with a fork.
  • 11 bake until golden, 25 to 30 minutes.
  • 12 cool.
  • 13 cut into 2 inch bars.
