Plum Nutty Conserve

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • 2 1/2 lbs fresh plums
  • 1 1/2 teaspoons grated orange rind
  • 1/2 cup orange juice
  • 1 3/4 ounces powdered fruit pectin (1 pkg.)
  • 5 1/2 cups sugar
  • 1/2 cup walnuts, finely chopped

Recipe

  • 1 remove and discard pits from plums (do not peel).
  • 2 chop plums into 1/2" pieces.
  • 3 combine chopped plums, orange rind and orange juice in a large dutch oven.
  • 4 stir in powdered fruit pectin.
  • 5 bring mixture to a rolling boil, stirring constantly.
  • 6 stir in sugar.
  • 7 return to a rolling boil; boil 1 minute, stirring constantly.
  • 8 remove from heat; skim off foam.
  • 9 stir 5 minutes.
  • 10 stir in walnuts.
  • 11 quickly spoon hot mixture into hot sterilized jars, leaving 1/4" headspace.
  • 12 remove air bubbles; wipe jar rims.
  • 13 cover at once with metal lids, and screw on bands.
  • 14 process in boiling-water bath for 15 minutes.
