Maple-oatmeal Drops

Ingredients
- 1/2 cup shortening
- 1 1/2 cups all-purpose flour
- 1 cup pure maple syrup
- 1 egg
- 1/4 cup milk
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 1/2 cups rolled oats
- 1/2 cup raisins
- 1/2 cup chopped walnuts or 1/2 cup chopped pecans
Recipe
- 1 preheat oven to 350°.
- 2 lightly grease a cookie sheet; set aside.
- 3 in a large mixing bowl beat shortening with an electric mixer on medium to high speed for 30 seconds.
- 4 beat in half of the flour.
- 5 add maple syrup, egg, milk, baking powder, and salt.
- 6 beat until combined, scraping sides of bowl occasionally.
- 7 stir in remaining flour and the oats.
- 8 stir in raisins and nuts (dough will be soft).
- 9 drop dough by heaping teaspoons 2 inches apart onto the prepared cookie sheet.
- 10 bake about 13 minutes or until edges are light brown.
- 11 let stand for 1 minute on cookie sheet.
- 12 transfer to a wire rack and let cool.
- 13 store-layer cookies between waxed paper in an airtight container; cover.
- 14 store at room temperature for up to 3 days or freeze for up to 3 months.
