Maple-oatmeal Drops

Ingredients

  • 1/2 cup shortening
  • 1 1/2 cups all-purpose flour
  • 1 cup pure maple syrup
  • 1 egg
  • 1/4 cup milk
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups rolled oats
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts or 1/2 cup chopped pecans

Recipe

  • 1 preheat oven to 350°.
  • 2 lightly grease a cookie sheet; set aside.
  • 3 in a large mixing bowl beat shortening with an electric mixer on medium to high speed for 30 seconds.
  • 4 beat in half of the flour.
  • 5 add maple syrup, egg, milk, baking powder, and salt.
  • 6 beat until combined, scraping sides of bowl occasionally.
  • 7 stir in remaining flour and the oats.
  • 8 stir in raisins and nuts (dough will be soft).
  • 9 drop dough by heaping teaspoons 2 inches apart onto the prepared cookie sheet.
  • 10 bake about 13 minutes or until edges are light brown.
  • 11 let stand for 1 minute on cookie sheet.
  • 12 transfer to a wire rack and let cool.
  • 13 store-layer cookies between waxed paper in an airtight container; cover.
  • 14 store at room temperature for up to 3 days or freeze for up to 3 months.
