Lemon Nut Bread

Ingredients
- 1/2 cup butter, softened
- 1 1/4 cups sugar
- 2 eggs, slightly beaten
- 1 tablespoon grated lemon peel
- 1/2 cup milk
- 1/2 teaspoon lemon extract
- 1 1/2 cups unsifted all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped pecans or 1/2 cup walnuts
Recipe
- 1 in medium bowl, combine butter and sugar; beat well.
- 2 add eggs, lemon peel, extract and milk.
- 3 beat by hand to blend.
- 4 add flour, baking powder and salt, stirring just until moistened.
- 5 fold in pecans.
- 6 turn batter into greased and floured 9x5x3 loaf pan, or 4-5 mini-loaf pans.
- 7 fill pans half full of batter.
- 8 bake 45-60 minutes in preheated 350 oven.
- 9 check with toothpick to see if it is completely baked.
