Lemon Nut Bread

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 1/2 cup butter, softened
  • 1 1/4 cups sugar
  • 2 eggs, slightly beaten
  • 1 tablespoon grated lemon peel
  • 1/2 cup milk
  • 1/2 teaspoon lemon extract
  • 1 1/2 cups unsifted all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans or 1/2 cup walnuts

Recipe

  • 1 in medium bowl, combine butter and sugar; beat well.
  • 2 add eggs, lemon peel, extract and milk.
  • 3 beat by hand to blend.
  • 4 add flour, baking powder and salt, stirring just until moistened.
  • 5 fold in pecans.
  • 6 turn batter into greased and floured 9x5x3 loaf pan, or 4-5 mini-loaf pans.
  • 7 fill pans half full of batter.
  • 8 bake 45-60 minutes in preheated 350 oven.
  • 9 check with toothpick to see if it is completely baked.
