Mango Bread

Ingredients

  • Servings: 36
  • 2 cups flour
  • 1 1/4 cups sugar
  • 1 1/2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/4 cup mango juice
  • 3 eggs
  • 2 teaspoons vanilla
  • 2 tablespoons honey
  • 1/4 cup pureed mango
  • 2 1/2 cups diced mangoes
  • 1 cup walnuts or 1 cup macadamia nuts

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 grease a 13x9x2" pan.
  • 3 in a large bowl, combine flour, sugar, cinnamon, baking soda, and salt.
  • 4 in a medium bowl, combine vegetable oil, mango juice, eggs, vanilla, and honey.
  • 5 slowly add liquid ingredients to dry ingredients and mix well.
  • 6 stir in pureed mango.
  • 7 fold in diced mango and nuts.
  • 8 pour into pan and bake for 50-60 minutes.
  • 9 cut into pieces and serve warm with ice cream.
