Mango Bread

Ingredients

- 2 cups flour
- 1 1/4 cups sugar
- 1 1/2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 1/4 cup mango juice
- 3 eggs
- 2 teaspoons vanilla
- 2 tablespoons honey
- 1/4 cup pureed mango
- 2 1/2 cups diced mangoes
- 1 cup walnuts or 1 cup macadamia nuts
Recipe
- 1 preheat oven to 350 degrees.
- 2 grease a 13x9x2" pan.
- 3 in a large bowl, combine flour, sugar, cinnamon, baking soda, and salt.
- 4 in a medium bowl, combine vegetable oil, mango juice, eggs, vanilla, and honey.
- 5 slowly add liquid ingredients to dry ingredients and mix well.
- 6 stir in pureed mango.
- 7 fold in diced mango and nuts.
- 8 pour into pan and bake for 50-60 minutes.
- 9 cut into pieces and serve warm with ice cream.
