No Oil Carrot Cake

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 2 cups sugar
  • 4 eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 4 cups grated carrots
  • 3/4 cup crushed walnuts (slightly warmed, preferably)

Recipe

  • 1 preheat oven to 325°f.
  • 2 beat sugar and eggs together in a large bowl until thick and pale.
  • 3 stir flour, baking powder, baking soda and cinnamon together.
  • 4 fold flour mixture into the egg mixture.
  • 5 add carrots and nuts.
  • 6 spoon batter into a greased tube or bundt pan (or 2 loaf pans) and bake for 45 minutes or until tester comes out clean.
