No Oil Carrot Cake

Ingredients
- Servings: 8
- 2 cups sugar
- 4 eggs
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 4 cups grated carrots
- 3/4 cup crushed walnuts (slightly warmed, preferably)
Recipe
- 1 preheat oven to 325°f.
- 2 beat sugar and eggs together in a large bowl until thick and pale.
- 3 stir flour, baking powder, baking soda and cinnamon together.
- 4 fold flour mixture into the egg mixture.
- 5 add carrots and nuts.
- 6 spoon batter into a greased tube or bundt pan (or 2 loaf pans) and bake for 45 minutes or until tester comes out clean.
